I wasn't going to post today but I am because I am taking a little break. Cayce is at work and he doesn't get off until 2:00pm. We are leaving to go to the drive in around 5 because during the spring and the summer, they don't open the gates till 6:45, and it takes 45 minutes to get there. But anyways, I made this recipe last week, and it was so delicious. The steak was super tender, and the lentils were amazing.
32oz. beef stock
10oz sirloin steak, diced
1 tbsp. olive oil
2 handfuls baby carrots
1 medium onion, diced
1 tsp. ground thyme
3/4 28oz can of tomato sauce
1 cup lentils, soaked for 30 minutes.
1. Heat oil in large soup pot over medium heat, add meat and brown well. Add onion, carrots, and thyme and sauté for 5 minutes, stirring often. Add tomato sauce and beef stock and bring to a boil.
2. Add lentils, reduce the heat, and cook for 1-2 hours or until lentils are tender. Some water may need to be added.
