Mama's Meatloaf

Today is my mom's birthday, so I figure that I would post a recipe that she always used to make and that I made for supper last night. It is my mama's meatloaf recipe. It is super easy to throw together and it was very delicious and moist.

I got my big glass bowl and placed my 1 medium chopped onion on the bottom and then added my ground beef. The meat was 73/27 and not what I use at all. I always use 80/20 because I HATE grease. Just looking at it and I feel my arteries clogging up. Next time, I make this, I will definitely be using my preferred beef. Then 1 cup of bread crumbs, 1 egg and 1 cup milk was added.

Tip: Next time I will be using 3/4 cup of milk instead of 1 cup. I started mixing it by hand and then Cayce came and started pouring in mushrooms.


I got my trusty loaf pan and Cayce sprayed it generously and then we dumped it and spread it inside the pan. Then we made the ketchup topping for it mixed with brown sugar. Next time, the brown sugar will be left out. I used dark brown sugar and I didn't have any light brown.

When glazed the top of the loaf and put it in the oven at 350 for an hour. It came out looking delicious but drowning in grease. I will just do plain ketchup on top next time. I will also cook it a little longer to help it firm up a little more, because it was falling apart as I was plating.

Here is the finished plate. This meal was so delicious, and so filling that we had to stop and eat the rest later on in the night.
