August Favorite Recipe

This month, the favorite meal that I made that was requested pretty much every day after I made it was Taco Rice Tacos. It was just something that threw together because I didn't want to have regular tacos and I didn't have big burrito tortillas, and I just didn't want to have taco rice by itself.

To start off with, I used 1 pound of lean hamburger meat. That is the only kind of hamburger meat we eat, because we absolutely hate draining grease from regular ground beef, and it makes me sick. I browned the meat and then I added the vegetables.
 I dumped the tomatoes along with the juice into the pan and I drained half of the corn juice and added 1/4th cup of water and then mixed in the taco seasoning.


While the mix was boiling, my rice was cooking. I use 3 and 1/4 cups of water and boil that and then add my 1 and 1/2 cups rice and I let it cook for 18 minutes. The rice comes out so moist and fluffy. #DELICIOUS!

When my rice got done, I scooped out 2 spoonfuls at a time and mixed it together. I didn't end up using all the rice, and so that went to another meal the next night.

LOOKS SO DAMN TASTY! 

 I wanted to make burritos, but the tortillas I had weren't big enough, so we just had it taco style. The girls enjoyed it and they usually eat two tacos each, but that night they had 3 each and there was still more left over for lunch the next day.

My kids will eat anything that is put in front of them. I am not raising picky eaters. I wasn't picky growing up, but there are some things I will not touch.. like pickles, okra, sauerkraut. Cayce won't eat lima beans or butterbeans, but he will eat sauerkraut and pig's feet... gross, I know.

So that is last month's favorite meal. I am wanting to break out my slow cooker this month, and make some beef stew and pork roast with veggies. So, if you liked this post, let me know. I have another recipe that I want to post before next month, that the kids absolutely love and want every single morning for breakfast.. but I am not a breakfast person and I don't cook breakfast unless Cayce is in the kitchen cooking with me.
