Ingredients:
2 tbsp. olive oil
1 clove minced garlic
1 red sweet pepper
1 orange sweet pepper
1 onion, chopped
1 can no salt diced tomatoes
3 cups chicken broth
20 oz ground turkey
½ cup bread crumbs
1 ½ tsp. basil
2 small eggs, beaten
¼ cup parmesan cheese
8 oz spaghetti
2 tsp. garlic salt
Directions:
1. Heat olive oil in large pot on medium high. Add the onion, garlic, and peppers. Cook, stirring occasionally, until the vegetables are soft, about 5 minutes. Add tomatoes and broth. Bring to a boil, then reduce and simmer for about 15 minutes.
2. Meanwhile, make the meatballs. In a bowl, combine turkey, bread crumbs, basil, eggs, and cheese. Roll into meatballs. Heat oven to 400F, and bake 15 minutes, then flip and bake an additional 15 minutes.
3. Add spaghetti and meatballs to broth. Simmer 10 minutes, until pasta is tender.
